Chicken cheese-loaded fries are easy to make and so great for parties or just any Friday night! Start with French fries and top with cheese, chicken, or anything of your choice.

Packed with flavour and piled high with cheese and chicken, you will be licking your fingers with delight!

The first time I tried this recipe was when we had family around. I made a large batch, (double this recipe), and it finished just like that! After a few slight tweaks, I am ready to share this recipe. And I can assure you that you will love it!

With your fries, you can use whichever you like. If you want to make your own or use frozen. You could bake them in the oven, or you could fry them. It is entirely up to you. I alternate between all the methods. It really does depend on what I feel like doing!

I always add bell peppers to my chicken mixture because bell peppers are one of my favourite vegetables. I love bell peppers.

If you have been following my food blog for a while now you would know that I absolutely love using capsicum in everything. I would use bell peppers in everything if I could.

You can adjust the seasoning of the chicken as you prefer it. I love my foods to be spicy, so I have added a load of spices to this recipe. This recipe is not too spicy, but it’s not exactly mild either.

Adjust the spices as you prefer. You could even use leftover chicken in these loaded fries. Maybe you have leftover chicken and you want to use it up then this recipe is just perfect

I like to use mozzarella cheese, but you could use any type of cheese that you like. It is best to use blocks of cheese and then grate it yourself at home. Pre-grated cheese has added preservatives. This can result in cheese that doesn’t melt together as well as the cheese that you freshly grate yourself.

  • 500 g Chicken boneless
  • 1 tsp Chilli Powder
  • 1 tsp Kashmiri Chilli
  • 1 tsp Salt
  • 1 tsp Turmeric Powder Haldi
  • 1 tsp Coriander Powder
  • 1 tbsp Tandoori Masala
  • 1 tbsp Lemon Juice
  • 1 tbsp Oil
  • 1 tbsp Garlic Paste
  • 1 tsp Crushed Chillies

Stir Fry


  • Cut the boneless chicken into small pieces
  • In a bowl add all the marinade ingredients to the boneless chicken then mix the spices until well combined before leaving to marinate for 1 hour
  • In a pan cook the marinated chicken for 10 minutes on medium heat
  • As the chicken is cooking slice the onions and julienne the bell peppers then cook for a further 4-5 minutes
  • Add the tomato ketchup and mix to combine
  • Prepare your fries and once cooked add into broil proof dish
  • Add the chicken mixture on top and top with mozzarella cheese
  • Broil for 2-3 minutes until the cheese has melted then top with black pepper
  • Serve your chicken loaded fries immediately and enjoy!

Hi with the loaded chicken recipe can I choose not to marinate the chicken? Can I add the chicken straight to the pan let it cook on the pan and then add the spices and cook for few mins?
