This tomato chicken curry recipe is made in under an hour and only requires a handful of ingredients that you are sure to have locked away in your kitchen. A red chicken curry recipe that is a hearty and comforting meal for those busy weeknights when time in the kitchen is scarce.

The ultimate comfort food. A tomato chicken curry that is simmered slowly to accentuate all the beautiful and rich flavour from the spices, deliciously served over a bowl of freshly boiled basmati rice. A sure hit with every family member.

If you haven’t gathered by now, then I love creating new curry recipes. Everyone knows the traditional butter chicken curry recipe or classic chicken tikka masala or the authentic chicken karahi recipe. However, this recipe is a much less common one, although it is still delicious.

Unlike other curry recipes, this chicken curry has no onions in it. The masala base is made with tomatoes, and it adds a level of richness and sweetness that when paired with the chicken is so delicious.

Compared to my other curries this is a relatively mild chicken curry. This makes it perfect for the kids as well. Not only that it is packed full of protein making it a perfect addition to your healthy diet.

I like to use chicken that has the bone in as the juices that the bones release as they cook add packs of flavour. You can use boneless chicken if you like. If you choose to use boneless chicken, then remember to reduce the cooking time as boneless chicken takes less time to cook.

Ingredients

Instructions

  • Add the olive oil into a pan and heat up on medium heat until hot
  • Add the ginger paste and garlic paste then sauté for 1-2 minutes
  • Add the chicken and cook until the colour changes
  • Add the salt, chilli powder, turmeric powder, garam masala and chopped green chillies then cook the spices for 3-4 minutes – add some water to prevent the spices from burning and help them release their colour
  • Add the tomatoes and cook for a further 15-20 minutes
  • Garnish with the dried fenugreek leaves and coriander
  • Serve with basmati rice or naan bread and enjoy!
