Vegetable fried rice is colourful, healthy, and packed with flavours. If you’re looking for a go-to meal for busy weeknights or even lazy weekends, then this Chinese fried rice is the perfect staple.

This veg fried rice recipe is aromatic, delicious, and flavourful. Skip the wait for take-out, and make this vegetable stir-fried rice instead. This tastes just as good as any restaurant version, and it is much healthier.

This vegetable fried rice recipe can be altered to your personal preference by adding different vegetables. Perfectly cooked and tender grains of rice, this dish is all about the aroma, flavour, and colours. Even with such a simple and delicate flavour, this is a mouth-watering meal.

Growing up I was used to eating rice a lot. However, it was more biryani and pilau. I love to try new things and this vegetable fried rice recipe was something new for me.

Chinese flavours have always been something that I have loved trying because it’s a change from the normal Indian cuisine I so often eat.

This recipe sounds so simple and that’s because it is! Don’t be fooled though this recipe is still so good. As with all of my recipes I spent hours (days!) in the kitchen making different versions of fried rice to perfect my own version.

I love colourful dishes; it gets my kids to eat food much quicker. They see colour and they’re like ‘ooh fancy’.  So, with that being said this vegetable fried rice recipe is a great way to get the children (or adults – in my case my husband!) to get their daily intake of fruit and veg.

If you’ve been checking out some of my other recipes, you would probably know by now that I love using bell peppers. So, this recipe also features my beloved capsicum pepper, along with a variety of other vegetables including onions, carrots, and peas.

Ingredients

Cooking Rice

  • 200 g Rice
  • 1 Litre Water
  • 1 tsp Oil
  • 1 tsp Salt

Stir Fry

Instructions

  • In a large bowl add the rice and rinse twice to remove any excess starch then leave to soak in cold water for at least 30 minutes
  • In a saucepan bring the water to a boil
  • Add the salt, oil, and the soaked rice before cooking for 10 minutes until the rice is partially cooked
  • As the rice is cooking in another pan heat up the oil on medium heat until hot
  • Add the red onion, green chillies, garlic paste, red pepper and green pepper then sauté for a few minutes
  • Add the frozen peas, salt, pepper, soy sauce and tomato purée then cook for 5 minutes
  • Once the rice has cooked drain and rinse the rice with cold water then set aside
  • Add the rice then mix gently to incorporate the rice into the mixture without breaking it and cook until the grains are tender
  • Serve immediately and enjoy!
