Ingredients

Chocolate Digestive Biscuits: These biscuits provide the crunchy and crumbly base for the cheesecake bars. They add a rich chocolate flavor that pairs perfectly with the creamy filling.

Butter: Melted butter is used to bind the biscuit crumbs together to form a solid base for the cheesecake bars. It adds a delicious richness to the crust.

Cream Cheese: This creamy and tangy ingredient forms the base of the cheesecake filling. It provides a smooth and velvety texture that balances the sweetness of the other ingredients.

Caster Sugar: Used to sweeten the cheesecake filling, caster sugar dissolves easily and helps create a smooth texture in the final dessert.

Eggs: Eggs are essential for binding the filling together and creating a light and fluffy texture. They add structure to the cheesecake bars.

Peppermint Extract: This flavorful extract adds a refreshing and minty taste to the cheesecake bars, giving them a cool and invigorating finish.

Green Food Colouring: Used to give the cheesecake bars their signature mint green hue, food coloring adds a fun and vibrant touch to the dessert.

Oreo Cookies: Crushed Oreo cookies are swirled into the cheesecake filling, adding a contrasting texture and a rich chocolate flavor to the bars.

Double Cream: This ingredient is whipped and folded into the cheesecake filling to create a light and airy texture. It adds a luscious creaminess to the bars.

Serving Suggestions and Variations

Mint Oreo Cheesecake Bars are a delicious and easy-to-make dessert that is perfect for any occasion. Here are some serving suggestions and variations to enhance this already tasty treat.

  • For a festive touch, top Mint Oreo Cheesecake Bars with crushed candy canes or peppermint bark during the holiday season.
  • Drizzle chocolate sauce or hot fudge over the bars just before serving for an extra decadent dessert.
  • Serve Mint Oreo Cheesecake Bars with a scoop of mint chocolate chip ice cream for a refreshing and indulgent treat.
  • Add a sprinkle of finely chopped fresh mint leaves on top of the bars for a pop of color and a burst of fresh flavor.
  • For a crunchy texture, sprinkle chopped Andes mints or chocolate-covered espresso beans on top of the bars before serving.

If you want to switch things up a bit, here are some variations to try:

  • Instead of using Chocolate Digestive Biscuits for the crust, try using chocolate graham crackers or Oreos for a different flavor profile.
  • Experiment with different extracts such as vanilla, almond, or coconut for a unique twist on the classic mint flavor.
  • Swap out the green food coloring for a different color to match a specific theme or holiday.
  • Try adding in some chopped nuts such as pecans or pistachios for added crunch and flavor.
  • For a lighter version, use reduced-fat cream cheese and Greek yogurt in place of the double cream for a slightly healthier option.

Ingredients

  • 250 g Chocolate Digestive Biscuits
  • 100 g Butter Unsalted, melted
  • 600 g Cream Cheese
  • 150 g Caster Sugar
  • 2 Eggs
  • 1 tsp Peppermint Extract
  • Green Food Colouring optional
  • 250 g Mint Oreo Cookies roughly chopped
  • 100 ml Double Cream

Instructions

  • Preheat the oven to 180°C (350°F). Line a 20x20cm baking tin with parchment paper.
  • Crush the chocolate digestive biscuits into fine crumbs using a food processor or by placing them in a plastic bag and crushing them with a rolling pin.
  • In a bowl, combine the melted butter with the biscuit crumbs until well mixed. Press the mixture firmly into the bottom of the prepared baking tin to form the base. Chill in the fridge while preparing the filling.
  • In a large mixing bowl, beat the cream cheese and caster sugar together until smooth and creamy.
  • Add the eggs, one at a time, mixing well after each addition. Stir in the peppermint extract and a few drops of green food colouring, if desired, until evenly combined.
  • Gently fold in 200g chopped Mint Oreo cookies.
  • Pour the cheesecake mixture over the prepared biscuit base and spread it out evenly.
  • Bake in the preheated oven for 25 minutes, or until the edges are set but the centre still has a slight wobble.
  • Remove from the oven and allow to cool completely in the tin, then transfer to the fridge to chill for at least 1 hour, or until firm.
  • Once chilled, sprinkle the remaining chopped Mint Oreo cookies evenly over the top of the cheesecake bars.
  • Remove the cheesecake from the tin and cut into bars.
  • Chill the bars in the fridge for a further 30 minutes to allow the topping to set.
  • Serve chilled and enjoy!

Notes

For best results, allow the cheesecake bars to chill in the fridge for several hours or overnight before serving to allow the flavours to develop and the texture to set properly.
