This breakfast sandwich is cheesy, easy, and just so tasty. All you need is five minutes, six ingredients, and one pan. Perfect for breakfast on the go. This breakfast sandwich is loaded with eggs and cheese, but you can add your own choice of ingredients as well.

My kids love this sandwich and always want to have it all the time. This recipe is one of my favourites because it’s so easy to get my kids to eat breakfast now!

Normally one of my sons will be too busy watching TV, my daughter will be sat there brushing her hair for the next decade, and then my other son will be refusing to put his clothes on!

When I tell them I’m making this for breakfast and that they’re only getting it if they’re ready for school then they’re at the table fully dressed in their school uniforms before I can even ask! And yes, that’s how easy this recipe is and I can make it before school starts!

I know I keep talking about breakfast here, but these recipes are actually great for lunch and dinner as well. This is a great recipe to keep in your cookbook for those days when you are just too tired to cook something fancy.

Ingredients

Instructions

  • In a large frying melt the butter on low to medium heat
  • Crack the eggs into a separate bowl then whisk and add to the pan ensuring that the mixture spreads all over the pan
  • Immediately add the slices of bread into the pan then once the egg had coated the bottom of the bread turn over the bread slice immediately – make sure that you leave a little gap in between the two slices so that they can be flipped on top of one another
  • Cook the egg for 2-3 minutes until it has set then once cooked, use a spatula, and slide underneath the bread slides and flip
  • Add the cheese, salt, and black pepper along with any toppings of your choice on one of the bread slices then flip over any excess egg on the side
  • Flip the toast with no toppings on top of the other create a sandwich then cook for 30 seconds to allow the cheese to bind the two pieces together
  • Serve immediately and enjoy!
