Sweet Mango Chilli Sauce

Sweet Mango Chilli Sauce, a vibrant and flavourful condiment, has its roots in the rich culinary traditions of India, where chutneys are a staple. The recipe reflects a beautiful harmony of sweet and spicy notes, making it a favourite among many.

This chutney, with its blend of ripe mangoes, tangy vinegar, and fiery chilli flakes, is not only delicious but also fairly easy to prepare, making it suitable for cooks of all skill levels.

One of the great things about this recipe is its versatility. Whether you’re pairing it with a cheese board, spreading it on sandwiches, or using it as a glaze for grilled meats, this chutney adds a unique twist to any dish.

The ripe mangoes provide a natural sweetness, which beautifully complements the heat from the chilli flakes. The garlic adds a subtle pungency, while the vinegar brings in a necessary tang, tying all the flavours together.

There are numerous variations of mango chutney, each with its own unique set of ingredients and methods. Some recipes include raisins or dates for additional sweetness, while others might incorporate a variety of spices like cumin or mustard seeds for added depth.

The beauty of this recipe is its simplicity and the ease with which it can be adapted to suit your taste preferences.

In terms of difficulty, this recipe is quite straightforward. The process involves simmering the ingredients until they meld together into a thick, jam-like consistency.

The most challenging part might be the peeling and dicing of the mangoes, but with a bit of patience, it’s certainly manageable. Blending the cooked mixture to a smooth consistency is the final step in achieving the perfect texture.

While the history of mango chutney can be traced back to Indian cuisine, its popularity has spread globally.

In the UK, mango chutney became a beloved accompaniment during the British Raj in India, and it has since become a regular feature in British households, often served with curries and other Indian dishes.

Preparing Sweet Mango Chilli Sauce is a delightful experience. The aroma of simmering mangoes with spices fills the kitchen, creating a warm and inviting atmosphere. The end result is a chutney that not only tastes incredible but also has a beautiful, vibrant colour that brightens up any plate.

Sweet Mango Chilli Sauce is a testament to the simplicity and elegance of combining just a few ingredients to create something truly special. Its balance of sweet, spicy, and tangy flavours makes it a versatile addition to many dishes and a must-try recipe for anyone looking to add a bit of zing to their culinary repertoire.

Expert Tip: To enhance the flavour of your Sweet Mango Chilli Sauce, try roasting the chilli flakes before adding them to the saucepan. This simple step can bring out a deeper, smokier flavour in the chillies, adding an extra layer of complexity to the chutney.

What Ingredients to Use & Why

Before we dive into the ingredients of our Sweet Mango Chilli Sauce, it’s important to understand that each component plays a crucial role in creating the final product’s delightful flavour profile. Here’s a breakdown of each ingredient and why it’s essential:

Mangoes: Mangoes are the centrepiece of this chutney, offering a sweet, juicy base that balances the heat from the chillies. They’re perfect for this recipe because of their natural sweetness and soft texture when cooked.

If you can’t find ripe mangoes, consider using canned mango pulp as an alternative. Mangoes contribute a tropical, fruity taste that’s integral to the chutney’s overall flavour.

Granulated Sugar: Sugar helps to sweeten the chutney and enhances the natural sweetness of the mangoes. It also helps in thickening the mixture to the desired consistency. For a healthier alternative, you could try using honey or agave syrup, though this might slightly alter the flavour.

White Vinegar: Vinegar adds a tangy, acidic element to the chutney, creating a perfect balance with the sweetness of the mangoes and sugar. It also acts as a preservative, extending the chutney’s shelf life.

Apple cider vinegar can be a good substitute if white vinegar isn’t available, offering a slightly different but equally delicious tang.

Garlic: Garlic brings a depth of flavour and a hint of savouriness to the chutney. Its pungency complements the sweetness and heat, adding complexity to the flavour profile.

If you’re not a fan of garlic, you could reduce the quantity or omit it, but it does add a unique flavour that rounds out the chutney beautifully.

Chilli Flakes: Crushed chilli flakes provide the heat that contrasts with the sweet mangoes. They’re important for adding a spicy kick that defines this chutney. If you prefer a milder taste, you can reduce the amount of chilli flakes, or for more heat, add more or use fresh chillies for an intense flavour.

Salt: Salt is crucial for balancing and enhancing the flavours of the chutney. It helps to bring out the sweetness and acidity, creating a well-rounded taste. You can adjust the amount of salt based on your preference, but even a small amount makes a significant difference.

Each ingredient in this Sweet Mango Chilli Sauce recipe has been carefully chosen to contribute to its unique taste and texture. Understanding why each component is used not only helps in appreciating the final product but also allows you to experiment and adjust the recipe to your liking.

Expert Tip: If you’re looking for a smoother texture in your chutney, consider straining the mixture through a fine mesh after blending. This will remove any larger mango fibres or bits of chilli, resulting in a silkier, more refined consistency that’s perfect for spreading.

Frequently Asked Questions

Can I make this chutney with frozen mangoes?

Yes, you can use frozen mangoes to make this chutney. Just make sure to thaw them properly before use. The texture might be slightly different compared to using fresh mangoes, but the flavour will still be delicious.

How long can I store this chutney?

Stored in sterilised jars and sealed properly, the Sweet Mango Chilli Sauce can last for up to a month in the refrigerator. Ensure that you use a clean spoon each time to prolong its shelf life.

Is it possible to adjust the spiciness of the chutney?

Absolutely! You can adjust the level of heat by altering the amount of chilli flakes. Use less for a milder taste or add more if you prefer a spicier kick. You could even substitute the chilli flakes with fresh chillies for a different flavour profile.

Can I use brown sugar instead of granulated sugar?

Yes, you can use brown sugar in place of granulated sugar. It will give the chutney a deeper, slightly caramelised flavour. Keep in mind that the colour of the chutney might also be darker due to the brown sugar.

What dishes pair well with this chutney?

Sweet Chilli Mango Chutney is incredibly versatile. It pairs wonderfully with grilled meats, as a spread in sandwiches, with cheese boards, or even as a dip for snacks like samosas and pakoras. Its sweet and spicy flavour complements a wide range of dishes.

Can I blend the chutney for a smoother texture?

Yes, blending the chutney after it has cooled down a bit will give you a smoother texture. Be careful when blending hot liquids and ensure you allow the chutney to cool slightly before doing so. If you prefer a chunkier texture, you can skip the blending step.

Expert Tip: For a unique twist, experiment with adding a pinch of ground spices like cumin or coriander during the cooking process. These spices can introduce a warm, aromatic quality to the chutney, making it even more versatile in pairing with different foods.
