Preheat your oven to 160°C (325°F) and line a square baking dish with parchment paper.
In a bowl, combine the crushed Oreo cookies and melted butter. Press this mixture into the bottom of the prepared baking dish to create the crust.
In a separate bowl, beat the cream cheese and granulated sugar until smooth and creamy.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Gently fold in the sour cream and coarsely chopped Oreo cookies.
Pour the cream cheese mixture over the Oreo crust in the baking dish.
Bake in the preheated oven for about 25 minutes, or until the edges are set, and the centre is slightly jiggly.
Remove from the oven and let it cool to room temperature, then refrigerate for at least 2 hours to set.
Once chilled, cut into bars and serve. Enjoy your delicious Oreo Cheesecake Bars!
