Falooda. Is it a dessert? Is it a drink? Nope, it’s both! This falooda is a popular ice cream dessert where various ingredients are added in several layers and topped with ice cream, dried fruits, and glace cherries.

Making this at home is super easy and simple. In under half an hour you have a refreshing summer dessert! To make falooda you need to use thin vermicelli made of cornflour. There are different types of vermicelli, so be sure that you check carefully if the vermicelli is suitable for use in falooda.

This specific type of vermicelli has a distinct taste and flavour making them perfectly paired for this dessert. You can replace it with vermicelli made with wheat flour, but there will be a difference in taste.

I always use full-fat milk as this allows for a rich and creamy falooda. You could use semi-skimmed milk if you want to. For a vegan alternative, you could use coconut milk or oat milk.

Basil seeds, also known as sabja seeds or tukmaria, are the key ingredient in falooda recipes. These seeds are known to have several health benefits, especially in the hot summer months. However, if you do not have basil seeds you can replace them with chia seeds.

Instructions

  • Add water into a saucepan and bring to a gentle boil before adding the vermicelli – there are different types of vermicelli so ensure that the ones you use are suitable for falooda
  • Allow the vermicelli to gently simmer for 3 minutes then drain and rinse with cold water before setting aside
  • In a small add the basil seeds to cold water and set aside for at least 10 minutes
  • In another small bowl add the rose syrup to the cold milk and mix until the rose syrup has completely dissolved
  • Fill a tablespoon with rose syrup then hold the tablespoon at an angle against the edge of the glass and allow the syrup to drip slowly as you turn the glass – this step is optional and for decorative purposes
  • Add the basil seed mixture into the glass followed by the vermicelli – depending on your personal preference you can alter the amounts of basil seeds and vermicelli for each glass.
  • Add a scoop of vanilla ice cream and then pour the rose syrup mixture until the glass is filled before repeat with the remaining ingredients
  • Complete with a drizzle of rose syrup and enjoy on a hot summer day!
