Ingredients

Filling

  • 500 g Cherries Frozen and pitted
  • 150 g Sugar
  • 1 tsp Almond Extract
  • ¼ tsp Ground Allspice

Topping

  • 60 g Pastry Flour Whole Wheat
  • 100 g Sugar
  • 40 g Plain Flour
  • 1 tsp Baking Powder
  • ¼ tsp Salt
  • 2 large Eggs
  • 100 ml Milk
  • 2 tbsp Bourbon Extract
  • 2 tsp Lemon Peel Finely grated
  • 1 tsp Vanilla Extract

Instructions

  • Preheat the oven to 180°C (350°F) Gas mark 4.
  • Butter an 11x7x2-inch baking dish.
  • In a large bowl combine the ingredients for the filling; toss well.
  • Spread the filling evenly in the prepared dish.
  • In a separate bow whisk the dry ingredients for the topping.
  • Then gently stir in the wet ingredients for the topping.
  • Spoon the topping mixture over the filling.
  • Bake the cobbler until topping is golden brown and juices from filling are bubbling thickly at edges, about 50 minutes.
  • Serve cobbler warm with ice cream or whipped cream.
