In a large bowl mix the plain flour with all the rest of the dry ingredients until well combined
Crack the eggs and whisk until the egg yolks and egg whites are evenly combined
When ready to fry heat a pan with oil for deep frying until medium-hot ensuring that the oil is not too hot
Dip the chicken into the egg and then into the flour mixture before repeating by dipping into egg and flour again
Shake off any excess flour on the chicken then add the chicken into the fryer – there should be tiny bubbles surrounding them – and allow the chicken to cook undisturbed for 6-8 minutes until golden brown before flipping and allowing to cook for another 6-8 minutes until golden brown on the other side
Serve with French fries and the dip of your choice!

Better results can be had when the chicken is brined overnight & then substitute self-raising flour for the plain.

Yes, brining overnight made all the difference. It cleaned the chicken AND salted it to the bone. Make seasoning mix, divide in half and add 1/2 of salt to one half. Use unsalted half on rinsed chicken and marinade overnight. Add salted seasoning to flour.
