Preheat the oven to 200°C (400°F).
In a large bowl, combine the minced garlic, olive oil, salt, and black pepper.
Add the cubed potatoes to the bowl and toss them until they are well coated with the garlic mixture.
Transfer the potatoes to a baking dish and spread them out in a single layer.
Place the baking dish in the preheated oven and roast the potatoes for about 40 minutes, or until they are golden brown and crispy, stirring occasionally.
Once the potatoes are cooked, remove them from the oven and sprinkle them with freshly chopped parsley.
Toss the potatoes gently to distribute the parsley evenly.
Serve the roasted garlic potatoes hot as a delicious side dish.
