In a small bowl, combine the minced garlic, chopped rosemary, lemon zest and juice, olive oil, salt, and pepper. Stir until well mixed.
Place the lamb chops in a large dish and pour the marinade over them. Ensure all chops are well coated with the marinade. Cover and leave in the refrigerator for at least 2 hours.
Preheat your grill to medium-high heat.
Remove the lamb chops from the marinade, shaking off excess. Grill for about 4-5 minutes per side for medium-rare, or until they reach your desired level of doneness.
Let the lamb chops rest for a few minutes before serving, to allow the juices to redistribute.
Serve with a side of grilled vegetables or a fresh salad and enjoy!
