Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Add the eggs and vanilla extract to the mixture, and continue to beat until well combined.
In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, mixing until a cookie dough forms.
Gently fold in the M&M candies, ensuring they are evenly distributed throughout the dough.
Scoop out portions of cookie dough using a tablespoon and place them on the prepared baking sheet, leaving enough space between each cookie.
If you prefer, you can refrigerate the cookie dough for about 30 minutes at this point for slightly thicker cookies.
Bake in the preheated oven for 10-12 minutes, or until the edges are golden but the centers are still soft.
Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
