Ingredients

  • 400 g Sweetcorn drained
  • 1 tbsp Olive Oil
  • 1 tsp Lemon Juice
  • 1 Red Onion finely chopped
  • 1 Bell Pepper diced
  • 1 Cucumber diced
  • Salt to taste
  • Black Pepper to taste

Instructions

  • In a large bowl, combine all of the ingredients then adjust the seasoning according to your taste
  • Let the sweetcorn salad sit for about 10 minutes before serving to allow the flavours to meld together.
