The perfect recipe to make when you are feeling sick. It tastes so good that even when you’re ill you’ll want to have more and more.

Packed with vegetables and a delicious flavourful stock, this is the homemade chicken soup for you. This is a simple soup recipe that is ready in under an hour as there is no need to make a separate stock.

Everyone has their own way of making their favourite chicken soup recipe, so I thought I would share mine. This is a true recipe that really brings comfort to everyone.

It has classic flavours, but it’s made much quicker than traditional chicken soups.

There is no need to make a separate stock as you cook the vegetables and meat from their own satisfying broth.

You have to use bone-in chicken for this recipe. This is non-negotiable as the bones impart a lot of flavour that you just won’t be able to get with boneless chicken.

The juices of the bone release so much flavour as the broth is cooking.

The key part of this recipe is to let it simmer. The longer you let it gently simmer, the more juices and flavour you will get from the bones.

I shared a similar recipe a while back using Indian flavours instead. The recipe is called chicken yakhni and it is also perfect for when you have a cold and a delicious flu remedy.

In this chicken soup recipe, I like to use sweetcorn and carrots in this recipe, but I do mix it up and add other vegetables. Good vegetables to use include green beans and broccoli. It really depends on what you want to eat and what you have lying in your kitchen!

Ingredients

Instructions

  • Heat the oil in a pan on medium heat until hot
  • Add the ginger and garlic paste then sauté for 1-2 minutes
  • Add the chicken pieces and cook for 4-5 minutes
  • Add the salt, pepper, and soy sauce then cook for a further 2-3 minutes
  • Add the water and cook for 45 minutes until the chicken is cooked through
  • Remove the chicken and shred then add back into the pan along with the sweetcorn and carrots
  • Cook for 10 minutes until the vegetables have cooked through
  • Add 3 tablespoons of water to the cornflour and stir until completely dissolved
  • Add the cornflour mixture into the soup and cook for 3-4 minutes on medium heat
  • Serve immediately and enjoy!
