Ingredients

  • 1 tbsp Fennel Seeds
  • 1 tbsp Cumin Seeds
  • 1 tbsp Coriander Seeds
  • 1 tsp Black Peppercorns
  • 1 inch piece Cinnamon Stick
  • 2 Black Cardamom
  • 5 Green Cardamom
  • 5 Cloves
  • 2 Bay Leaves
  • 1 Star Aniseed
  • 1 tbsp Chilli Powder
  • 1 tbsp Kashmiri Chilli
  • 1 tbsp Ginger Powder
  • 1 tsp Turmeric Powder

Instructions

  • Add the fennel seeds, cumin seeds, coriander seeds, black peppercorns, cinnamon stick, black cardamom, green cardamom, cloves, bay leaves, and star aniseed to a dry blender or spice grinder.
  • Blend the whole spices until they turn into a fine powder. Make sure the mixture is smooth and there are no coarse bits left.
  • Transfer the freshly ground whole spice powder into a clean, dry mixing bowl.
  • Add the chilli powder, Kashmiri chilli, ginger powder, and turmeric powder to the bowl with the ground whole spices.
  • Mix everything thoroughly using a spoon or whisk, ensuring all the spices are evenly combined.
  • Your homemade Nehari Masala is now ready to use. Store it in an airtight container away from moisture and direct sunlight.
