Nihari masala is a rich, aromatic spice blend essential for creating the deep, complex flavours of traditional Nihari stew. This carefully balanced mix of warming spices enhances slow-cooked meat.
Add the fennel seeds, cumin seeds, coriander seeds, black peppercorns, cinnamon stick, black cardamom, green cardamom, cloves, bay leaves, and star aniseed to a dry blender or spice grinder.
Blend the whole spices until they turn into a fine powder. Make sure the mixture is smooth and there are no coarse bits left.
Transfer the freshly ground whole spice powder into a clean, dry mixing bowl.
Add the chilli powder, Kashmiri chilli, ginger powder, and turmeric powder to the bowl with the ground whole spices.
