In a bowl, combine the minced garlic, ground cumin, ground coriander, smoked paprika, ground turmeric, ground cinnamon, chili powder, olive oil, salt, and pepper. Mix well to form a marinade.
Add the thinly sliced chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours or overnight for best results.
Preheat your grill or barbecue to medium-high heat.
Thread the marinated chicken slices onto metal skewers or wooden skewers that have been soaked in water for about 30 minutes.
Grill the chicken skewers for about 12-15 minutes, turning occasionally until they are cooked through and have a nice char on the edges.
While the chicken is grilling, warm the pita bread or flatbreads on the grill or in a dry frying pan.
Once the chicken is cooked, remove it from the skewers.

Drizzle with natural yogurt or tahini sauce.
