Rinse the urad dal thoroughly under cold water.
In a large pot, add the washed urad daal and water. Bring to a boil.
Add salt and turmeric, reduce the heat to low, cover, and simmer for about 30 minutes or until the daal is soft and fully cooked.
In a separate pan, heat ghee over medium heat.
Add cumin seeds and let them sizzle for a few seconds.
Add onions, garlic, ginger, and green chillies. Sauté until the onions turn golden brown.
Add tomatoes and cook until they are soft and pulpy.
Pour this mixture into the cooked urad daal and stir well.
Add garam masala and let it simmer for another 5-10 minutes.
Garnish with fresh coriander leaves before serving.
