Sweet Chilli Salmon

Sweet chilli salmon is a flavourful and healthy dish that is perfect for dinner. The combination of sweet and spicy flavours is a winning combination for the table.

People often wrongly assume that to eat healthily you must eat disgusting food. This recipe is here to prove that statement wrong. Not only is this recipe healthy, but it is packed with flavour and tastes absolutely delicious.

According to NHS guidelines, it is recommended that you eat at least two portions of fish per week, including one oily fish, for a healthy and balanced diet.

One example of an oily fish is salmon. It is a nutrient-dense fish with numerous health benefits. Salmon is an excellent source of protein, omega-3 fatty acids, and a variety of vitamins and minerals.

It has been shown to improve heart health, brain and immune function, and skin and bone health. Using fresh and high-quality salmon is essential for making the best sweet chilli salmon.

You can use frozen salmon, but the problem with frozen fish is that you never know how long it has been sitting on the shelves.

Although I don’t mention it in the steps of this recipe as it’s not essential, marinating the fish in the sweet chilli sauce prior to cooking is a good idea.

This will help to infuse the flavour into the flesh while also keeping it moist. However, it is vital that you do not to marinate the fish for too long because the flesh is delicate, and the acidic marinade can break it down. Keep the marination time to no more than 30 minutes.

Although baking is the healthiest way to cook salmon, you can also pan-fry it to create that crispy crust. However, it will also have more calories due to the addition of oil or fat.

Cooking time for fish is very short, so be careful not to overcook it. If you have a kitchen thermometer then cook the fish until it reaches an internal temperature of 125°F (50°C).

The fish will be flaky and cooked through at this point. Serve the sweet chilli salmon with steamed rice and vegetables for a filling and nutritious meal.

Instructions

  • Begin by preheating the oven to 200°C/400°F and prepare a baking sheet with parchment paper.
  • Whisk together the sweet chilli sauce, soy sauce, lime juice, honey, minced garlic, salt, and pepper in a small bowl.
  • Place the salmon fillets on the prepared baking sheet and generously brush the sweet chilli mixture over each fillet, reserving a small amount for later use.
  • Bake the salmon in the preheated oven for approximately 10-12 minutes, or until it’s fully cooked and flaky.
  • While the salmon is cooking, heat olive oil in a small pan over medium heat.
  • Next, add the reserved sweet chilli sauce mixture to the pan and bring it to a simmer.
  • Simmer the mixture for 2-3 minutes while stirring constantly, until it thickens and becomes syrupy.
  • Once the salmon is cooked, remove it from the oven and drizzle the sweet chilli sauce over each fillet.
  • For garnish, you can add some freshly chopped coriander or parsley, if desired. Serve the sweet chilli salmon immediately.
