In a large mixing bowl, combine the potato wedges with olive oil, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Toss until the potatoes are evenly coated with the spices and oil.
Spread the seasoned potatoes in a single layer on a baking tray lined with parchment paper.
Roast in the preheated oven for about 35 minutes or until the potatoes are golden brown and crispy on the outside, and tender on the inside. Remember to flip them halfway through cooking for even browning.
Once cooked, remove the potatoes from the oven and transfer them to a serving dish.
Garnish with chopped fresh parsley, if desired, and serve hot as a delicious side dish or snack.
