Ingredients

  • 3 Eggs
  • 100 g Caster Sugar
  • 1 tsp Vanilla Extract
  • 100 g Plain Flour
  • Salt
  • Icing Sugar

Instructions

  • Preheat your oven to 180°C (160°C fan). Line two baking sheets with parchment paper.
  • In a large mixing bowl, crack the eggs and add the caster sugar. Whisk them together until the mixture becomes pale and fluffy.
  • Stir in the vanilla extract.
  • Sift the plain flour and a pinch of salt into the egg mixture. Gently fold the flour into the eggs until well combined. Be careful not to overmix; you want a light and airy batter.
  • Transfer the batter to a piping bag fitted with a plain round tip (about 1.5 cm in diameter).
  • Pipe the batter onto the prepared baking sheets in finger-like shapes, each about 7-8 cm long. Leave some space between each ladyfinger.
  • Bake in the preheated oven for 12-15 minutes or until the ladyfingers are golden and firm to the touch.
  • Remove them from the oven and let them cool on a wire rack.
  • Once cooled, you can dust the ladyfingers with icing sugar if desired.
  • Your homemade ladyfingers are ready to enjoy on their own or use in various dessert recipes like Tiramisu!
