Tuna Quesadillas

Chunks of tuna, sweetcorn, and red onions slathered in mayonnaise and topped with oozing cheese. A great lunch or even a brilliant afternoon snack for the kids!

Ingredients

Instructions

  • In a bowl add the canned tuna, finely diced red onion, sweetcorn, and mayonnaise then mix until all the ingredients are evenly combined
  • Drizzle olive oil onto a griddle pan and brush the oil over the pan
  • Add a flour tortilla and top with mozzarella cheese and the tuna mixture
  • Top with more cheese and finish with a flour tortilla on top
  • Brush the top of the tortilla with some oil
  • Allow the quesadilla to cook for 2-3 minutes on medium heat until the bottom side is lightly browned
  • Flip over and allow to cook for a further 2-3 minutes until lightly browned
  • Cut the quesadillas into slices and enjoy warm!
