Crispy, golden beef pakoras bursting with spiced flavour make the perfect snack for any occasion. Each bite combines tender beef, fragrant herbs, and a crunchy gram flour coating that's hard to resist.

Ingredients

  • 200 g Beef boneless, cut into small cubes
  • 50 g Gram Flour sifted
  • 25 g Rice Flour
  • 1 Egg
  • 30 g Yoghurt thick
  • 1 tsp Garlic Paste
  • 1 tsp Ginger Paste
  • ½ tsp Turmeric Powder
  • 1 tsp Chilli Powder
  • ½ tsp Cumin Powder
  • ½ tsp Coriander Powder
  • ¼ tsp Black Pepper
  • ½ tsp Garam Masala
  • 1 tbsp Lemon Juice
  • 1 tbsp Coriander Leaves finely chopped
  • 1 Green Chilli finely chopped
  • Salt to taste
  • Oil for deep frying

Instructions

  • In a bowl, combine beef cubes, turmeric powder and a pinch of salt; mix and let sit for 5 minutes.
  • In another bowl, whisk together egg and yogurt until smooth.
  • Add gram flour, rice flour, ginger garlic paste, chilli powder, cumin powder, coriander powder, black pepper, garam masala, and salt into the yogurt–egg mix; stir to form a thick batter.
  • Fold in lemon juice, chopped coriander, and green chilli.
  • Add beef cubes into this batter and toss to coat evenly. Let marinate for 10 minutes.
  • Heat oil in a deep frying pan over medium heat.
  • When oil is hot (but not smoking), drop coated beef cubes in small batches, ensuring they don’t touch.
  • Fry each batch for 6-8 minutes or until golden brown and crisp, turning once for even colour.
  • Remove onto paper towels to drain excess oil.
  • Serve hot with mint chutney or tamarind sauce.
