Ingredients

  • 200 g Gram Flour
  • 200 ml Water
  • 250 g Sugar
  • 1/4 tsp Cardamom Powder
  • 50 g Chopped Nuts almonds, cashews, pistachios
  • 100 ml Ghee

Instructions

  • In a mixing bowl, combine the gram flour with water to make a smooth batter.
  • Heat ghee in a deep frying pan over medium heat.
  • Using a perforated spoon or a slotted ladle, pour small amounts of batter into the hot ghee, allowing the droplets to fall into the oil and form tiny boondi balls. Fry until they turn golden brown. Remove and drain excess oil by placing them on a paper towel.
  • In a separate pan, prepare the sugar syrup by dissolving sugar in water over medium heat. Stir continuously until the syrup reaches a one-string consistency.
  • Add the cardamom powder and mix well.
  • Combine the fried boondi and chopped nuts in a large bowl.
  • Pour the hot sugar syrup over the boondi and nuts mixture. Mix thoroughly until well combined.
  • Allow the mixture to cool slightly until it is warm enough to handle.
  • Take small portions of the mixture and shape them into round ladoos using your hands.
  • Once shaped, allow the ladoos to cool completely before serving.

Notes

Be cautious while frying the boondi as they should be crispy but not burnt.
Ensure the sugar syrup reaches the correct consistency to bind the ladoos together.
You can adjust the amount of sugar according to your taste preference.
