Sukha Aloo Matar is a simple yet flavour-packed North Indian dish made with potatoes and peas. Perfectly spiced and dry in texture, it pairs beautifully with chapati, puri, or paratha for an everyday comforting meal.

Ingredients

  • 500 g Potatoes peeled and cubed
  • 200 g Green Peas fresh or frozen
  • 2 tbsp Oil
  • 1 tsp Cumin Seeds
  • 1/2 tsp Asafoetida
  • 1 Onion finely chopped
  • 1 tsp Ginger fresh, grated
  • 1 tsp Garlic minced
  • 2 Green Chillies slit
  • 1 tsp Coriander Powder
  • 1/2 tsp Cumin Powder
  • 1/2 tsp Turmeric Powder
  • 1 tsp Chilli Powder
  • 1/2 tsp Dried Mango Powder amchur
  • 1/2 tsp Garam Masala
  • 1 tsp Salt adjust to taste
  • 2 tbsp Fresh Coriander chopped

Instructions

  • Heat oil in a large pan over medium heat. Add cumin seeds and asafoetida; sauté until aromatic.
  • Add chopped onion and sauté until golden brown.
  • Stir in grated ginger, minced garlic, and slit green chillies; cook for 2 minutes.
  • Add cubed potatoes and sauté for 5 minutes until slightly browned.
  • Add green peas, coriander powder, cumin powder, turmeric powder, red chilli powder, dried mango powder, and salt. Mix well.
  • Cover and cook on low heat for 10–12 minutes, stirring occasionally, until potatoes are tender.
  • Sprinkle garam masala over the dish, mix gently, and cook for an additional 2 minutes.
  • Garnish with fresh coriander before serving.
