Simple Lamb Salan is a comforting curry made with tender lamb, onions, tomatoes and everyday spices, slowly cooked until rich, flavourful and full of depth. Perfect for serving with rice, naan or fresh chapatis.
Place the lamb into a large pot, then add the onions, tomatoes and garlic.
Add the spices, followed by the bay leaves, cinnamon sticks, black cardamoms and dried fenugreek.
Pour in the oil and water, then mix everything well until evenly combined.
Cover the pot with a lid and bring the mixture to a gentle boil over medium-high heat.
Once boiling, reduce the heat to low and leave the salan to simmer gently for 45–60 minutes, or until the lamb is tender and cooked through. Stir occasionally during cooking to prevent anything from sticking to the bottom of the pot.
Taste and adjust the seasoning if needed before serving. Serve hot with naan, chapati or steamed rice.
