Malai chicken tikka is a rich, creamy Indian grilled recipe made with tender chicken marinated in yoghurt, cream, and mild spices, delivering a smoky, melt-in-the-mouth texture with a subtle, aromatic flavour.

Ingredients

  • 700 g Chicken boneless
  • 100 g Yoghurt
  • 100 g Double Cream
  • 1 tsp Green Chilli Paste
  • 1 tsp Ginger Paste
  • 1 tsp Garlic Paste
  • 1 tbsp Oil
  • 1 tbsp Lemon Juice
  • 1 tbsp Cornflour
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Cumin Powder
  • 1 tbsp Dried Fenugreek Leaves

Instructions

  • In a large bowl, mix all the ingredients apart from the chicken until smooth and fully combined, forming a thick marinade.
  • Add the chicken and coat it evenly in the marinade, ensuring every piece is well covered. Cover and refrigerate for at least 2 hours to allow the flavours to develop.
  • Preheat the oven to 180°C. Place the marinated chicken pieces on a lined baking tray or a wire rack set over a tray for better air circulation.
  • Cook in the preheated oven for 15 minutes. Turn the chicken pieces over, then continue cooking for a further 10 minutes until fully cooked through and slightly charred on the edges.
  • Remove from the oven and allow to rest briefly before serving.
