Malai chicken tikka is a rich, creamy Indian grilled recipe made with tender chicken marinated in yoghurt, cream, and mild spices, delivering a smoky, melt-in-the-mouth texture with a subtle, aromatic flavour.
In a large bowl, mix all the ingredients apart from the chicken until smooth and fully combined, forming a thick marinade.
Add the chicken and coat it evenly in the marinade, ensuring every piece is well covered. Cover and refrigerate for at least 2 hours to allow the flavours to develop.
Preheat the oven to 180°C. Place the marinated chicken pieces on a lined baking tray or a wire rack set over a tray for better air circulation.
Cook in the preheated oven for 15 minutes. Turn the chicken pieces over, then continue cooking for a further 10 minutes until fully cooked through and slightly charred on the edges.
Remove from the oven and allow to rest briefly before serving.
