Ingredients

  • 1 kg Lamb Chops washed and patted dry
  • 2 tbsp Olive Oil
  • 1 tbsp Lemon Juice
  • 2 tbsp Soy Sauce
  • 2 tbsp Honey
  • 6-8 cloves Garlic crushed
  • 1 tsp Dried Parsley
  • 1 tsp Dried Oregano
  • 1 tsp Paprika
  • 1 tsp Chilli Flakes
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions

  • Preheat your oven to 200°C / 400°F / Gas Mark 6.
  • Mix the olive oil, soy sauce, honey, lemon juice, crushed garlic, paprika, dried oregano, dried parsley, chilli flakes, salt, and pepper in a small bowl to create the marinade.
  • Place the chops in a baking tray and coat them thoroughly with the marinade mixture.
  • Set aside to marinate for at least 1 hour.
  • Arrange the chops in a single layer (do not cover with foil).
  • Roast in the centre of the oven for 30 minutes.
  • Remove the tray carefully, flip the chops over, and spoon the pan juices over them.
  • Return to the oven for another 10 to 12 minutes until the fat is golden and the meat is cooked through.
  • Remove from the oven and rest for 5 minutes before serving.
