A classic South Asian dessert made with rice and milk, slow-cooked until creamy and rich. Rice kheer is a comforting, traditional favourite often served during celebrations or after meals.
Add water to a deep pan and bring it to a rolling boil over high heat.
Once the water is boiling, add the soaked and drained rice, then reduce the heat to low and let it cook for 15 minutes or until the rice is soft and partially cooked.
Pour in the milk and mix everything well, ensuring the rice doesn’t stick to the bottom.
Add the sugar and continue to cook on medium heat for another 15 minutes, stirring occasionally to prevent burning.
Once the mixture starts to thicken and the rice is fully cooked, add the raisins and let it simmer on low heat until it reaches your desired consistency.
Garnish with your desired dry fruits and serve warm, or allow it to cool down completely and refrigerate for a chilled version.
