Ingredients

  • 200 g Plain Flour
  • 1/2 tsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1 tbsp Yoghurt
  • 150 ml Water lukewarm
  • 1 tsp Food Colouring yellow or orange or red

Sugar Syrup

  • 300 ml Water
  • 300 g Sugar
  • 1 tsp Lemon

Instructions

  • In a mixing bowl, combine the plain flour, baking powder, and baking soda.
  • Add the yogurt and lukewarm water gradually to form a smooth batter. Mix well.
  • Stir in the food colouring of your choice. The batter should have a bright, vibrant colour.
  • Cover the bowl with a clean kitchen towel and let it rest for 1 hour to ferment.
  • In the meantime, prepare the syrup. In a saucepan, combine the water, sugar, and lemon juice. Bring to a boil, then reduce the heat and let it simmer for about 10 minutes until slightly thickened. Remove from heat and set aside.
  • After the batter has fermented, heat the oil in a deep frying pan over medium heat.
  • Transfer the batter to a squeeze bottle or a piping bag with a small round nozzle.
  • Squeeze the batter into the hot oil in a circular motion to form spiral shapes. Fry until golden brown and crisp.
  • Remove the fried jalebis from the oil using a slotted spoon and immediately dip them into the warm syrup. Ensure they are coated evenly.
  • Allow the jalebis to soak in the syrup for a few seconds, then remove and place on a plate lined with kitchen paper to absorb any excess syrup.
  • Serve warm and enjoy your delicious homemade jalebis!

Notes

Adding food colouring to the flour mixture gives the jalebis their vibrant appearance. Be sure to choose a food colouring that complements your preference.
The homemade syrup adds sweetness and moisture to the jalebis, enhancing their flavour and texture.
