Ingredients

  • 4 large Potatoes Peeled and grated
  • 1 Onion Finely grated
  • 2 Eggs
  • 4 tbsp Plain Flour
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • Oil For frying

Instructions

  • Grate the peeled potatoes using a fine grater. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible.
  • In a mixing bowl, combine the grated potatoes, finely grated onion, eggs, flour, salt, and black pepper. Mix well until all the ingredients are evenly combined.
  • Allow the mixture to rest for 15 minutes. This helps the potatoes release more moisture, resulting in crispier pancakes.
  • Heat a generous amount of vegetable oil in a large frying pan over medium-high heat.
  • Take a spoonful of the potato mixture and carefully place it in the hot oil. Flatten it slightly with the back of the spoon to form a pancake shape. You can make multiple pancakes at once, but be sure not to overcrowd the pan.
  • Fry the pancakes for about 4-5 minutes on each side, or until they are golden brown and crispy. You may need to adjust the heat to prevent burning.
  • Remove the cooked potato pancakes from the pan and place them on a plate lined with paper towels to remove excess oil.
  • Continue this process until all the potato mixture is used, adding more oil to the pan as needed.
  • Serve the potato pancakes hot, garnished with sour cream or applesauce if desired.
  • Enjoy your delicious homemade potato pancakes!
  • Notes:
  • Be sure to squeeze out as much liquid as possible from the grated potatoes to ensure crispy pancakes.
  • You can customize the seasoning to your liking, adding herbs or spices for extra flavour.
  • Serve the potato pancakes as a side dish or with your favourite toppings, such as sour cream, applesauce, or smoked salmon.
