Chicken Madras is a classic Indian dish known for its spicy flavors and rich tomato-based sauce. This aromatic curry is made with tender chicken cooked in a blend of authentic spices, making it a popular choice for those who enjoy bold and vibrant flavors.
Begin by heating oil in a large pan over medium heat.
Proceed to add chopped onions and sauté them until they turn translucent and start to brown. This should take about 5-7 minutes.
After that, add minced garlic, ginger, and green chillies to the pan and cook for an additional 1-2 minutes until they release their fragrance.
Then, add chopped tomatoes to the pan and cook for 4-5 minutes until they become soft and pulpy.
Add chicken pieces to the pan and stir them well to coat with the tomato mixture. Cook for 5-7 minutes or until the chicken changes colour.
Next, add ground coriander, ground cumin, turmeric powder, chilli powder, and salt to the pan. Mix them well to combine.
Cook for 2-3 minutes and add 2 tablespoons of water to release the colour of the spices.
Pour water into the pan and stir well. Cover the pan and cook on medium heat for 20-25 minutes, stirring occasionally, until the chicken is fully cooked and the sauce has thickened.
