Heat the olive oil in a pan on medium heat until hot
Add the garlic paste and ginger paste then sauté for 1-2 minutes until fragrant
Add the finely sliced onions and cook on medium heat for 3-4 minutes
Add the chopped tomatoes and cook for 2-3 minutes
Add the salt, chilli powder, turmeric powder and garam masala then cook the spices for 3-4 minutes – add the water to allow the spices to release the colour and
Add the yoghurt then mix immediately to prevent curdling and cook for 4-5 minutes
Add the chopped okra and mix into the spices then cover and cook on low heat for 8-10 minutes until the okra is tender
Serve alongside some homemade chapatti and enjoy!
